Banana Bread



Simply & Easy


I am a mother of two little ones, Nicholas 7 and Isabella 3. Since I have been working from home recently, due to the circumstances, I am able to spend more precious time with them.


One thing we like to do is bake together (they like it because they get to eat the sweets) I like it because we are making memories and they are learning their way around the kitchen.


I made a simple banana bread recipe that I must share because it is one of our favorites. NOTE: The browner the banana the better the bread!










INGREDIENTS:


Browning banana (3-4)

Stick of butter (1)

Sugar (3/4 cups)

Egg (1)

Vanilla (1 tsp)

Baking soda (1 tsp)

Baking powered (1 tsp)

Salt (a pinch of salt)

Flour (1 1/2 cups)

Cinnamon (1/4 tsp)

Nuts of your choice (1 cup, chopped)







INSTRUCTIONS:


Preheat oven at 350 degrees. Here is a little life hack: I ALWAYS line my baking pan with parchment paper rather than greasing it. No sticking and no mess, less washing!


In a large mixing bowl mix together the mashed bananas with the butter (melt it first) about 40 seconds in the microwave). Then add in the sugar, vanilla, and egg. Mix it all together with a rubber spatula.


Then add in the dry ingredients, baking soda, baking powder, cinnamon and salt. Stir until the batter is all combined. Add in your flour and nut of choice, this time we used pecans and it tasted great!

This is also the time to add in chocolate chips if desired in your batter. BAKING HACK: I add in a table spoon of apple sauce to keep the batter moist.


Baking time is 50 to 60 minutes depending on the type of stove you own. To test and see if the banana bread is done baking, stick a fork into it, if it comes out clean the bread is done. Let it rest in pan for 10-20 minutes before removing and serving. ENJOY!
